When making apple wine the more acidic\u00a0and sour varieties of apples are best (Winesap, McIntosh, and Jonathans all work great &#8211; but you can use any variety). Once you make\u00a0the apple wine it can then be distilled and turned into apple moonshine.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3>Apple Wine Stats<\/h3>\n<ul>\n<li>Starting Gravity: 1.065<\/li>\n<li>Ending Gravity: 1.000<\/li>\n<li>Wash Alcohol By Volume: (ABV) 8.5%<\/li>\n<li>Spirit ABV: 40% (80 Proof)<\/li>\n<li>Time to Ferment: 7 Days (can vary depending on yeast and temp)<\/li>\n<li>Fermentation temperature: 70F<\/li>\n<\/ul>\n<h3>Ingredients<\/h3>\n<ul>\n<li>25 pounds of\u00a0ripe apples ( 1\/2 bushel &#8211; we have a mixed variety of apples which\u00a0works really well)<\/li>\n<li>5-10 pounds cane sugar (1-2 pounds per gallon of mash)<\/li>\n<li>Enough water to reach 5\u00a0gallons of total liquid after juicing the apples<\/li>\n<li>2.5 teaspoon yeast nutrient (Follow the directions on the label- most brands require 1\/2 tsp per gallon)<\/li>\n<li>1 packet dry wine yeast<\/li>\n<\/ul>\n<h3>Mashing Equipment<\/h3>\n<ul>\n<li>Pleasant Hill MacIntosh Fruit Press 3-5\u00a0Gallon<\/li>\n<li>Pleasant Hill Maximizer Fruit Grinder<\/li>\n<li>6.5 gallon fermenter with airlock<\/li>\n<li>Large pot for mashing<\/li>\n<li>Mash paddle or spoon<\/li>\n<li>Brewing\/Wine hydrometer or refractometer<\/li>\n<li>Brewing thermometer<\/li>\n<\/ul>\n<h3>Mashing And Fermentation Process<\/h3>\n<ul>\n<li>Pick 1\/2 bushes of apples<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/pick_apples_grande.JPG?1265\" alt=\"\" \/><\/p>\n<ul>\n<li>Wash the apples<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/apple_wash_grande.JPG?1259\" alt=\"\" \/><\/p>\n<ul>\n<li>Add the apples to the apple grinder and grind<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/add_to_grinder_grande.JPG?1260\" alt=\"\" \/><\/p>\n<ul>\n<li>Add the mash bag to the apple press<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/add_mash_bag_grande.JPG?1261\" alt=\"\" \/><\/p>\n<ul>\n<li>Add the grinded apples to the fruit press<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/add_apples_grande.JPG?1262\" alt=\"\" \/><\/p>\n<ul>\n<li>Press the apples<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/press_apples_grande.JPG?1263\" alt=\"\" \/><\/p>\n<ul>\n<li>Collect the apple juice in a sterilized bucket<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/collect_juice_grande.JPG?1264\" alt=\"\" \/><\/p>\n<ul>\n<li>Once all of the apples have been\u00a0juiced\u00a0add\u00a0the juice to the mash pot<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/Dump_Juice_grande.JPG?1266\" alt=\"\" \/><\/p>\n<ul>\n<li>Add 4 gallons of water (or enough to reach 5.5 gallons total volume)<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/Add_water_4e639543-9291-4b3d-97c5-da00702ec6c7_grande.JPG?1267\" alt=\"\" \/><\/p>\n<ul>\n<li>Mix the apple juice and water together<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/Mix_water_juice_grande.JPG?1268\" alt=\"\" \/><\/p>\n<ul>\n<li>Take a gravity reading<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/gravity_reading_d193fbff-b61a-412d-a41d-915e789d4e11_grande.JPG?1269\" alt=\"\" \/><\/p>\n<ul>\n<li>Write down the gravity reading (Our original gravity was 1.013)<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/1_013_grande.JPG?1270\" alt=\"\" \/><\/p>\n<ul>\n<li>You can go ahead and start heating at this point.<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/Heat_mash_grande.JPG?1271\" alt=\"\" \/><\/p>\n<ul>\n<li>Add 4-10 pounds of cane sugar while the mixture is heating up (you want to have a starting gravity\u00a0around 1.065)<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/add_sugar_grande.JPG?1272\" alt=\"\" \/><\/p>\n<ul>\n<li>Take another gravity reading it should be somewhere around 1.065. If the starting gravity is low keep adding sugar until the starting gravity is around 1.065. ( The wine will yield 8.5% if it ferments down to 1.000 )<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/gravity_1065_grande.JPG?1273\" alt=\"\" \/><\/p>\n<ul>\n<li>Cool the mash to 70 degrees with a wort chiller and siphon\u00a0the mash into a 6.5 gallon\u00a0fermenter<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/siphon_into_fermenter_grande.JPG?1274\" alt=\"\" \/><\/p>\n<ul>\n<li>Re-hydrate yeast if the package requires it<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/hydrate_yeast_grande.JPG?1275\" alt=\"\" \/><\/p>\n<ul>\n<li>Add the yeast to the fermenter<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/add_yeast_grande.JPG?1276\" alt=\"\" \/><\/p>\n<ul>\n<li>Add\u00a02.5 teaspoon yeast nutrient (Follow the directions on the label- most brands require 1\/2 tsp per gallon)<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/yeast_nutrient_grande.JPG?1277\" alt=\"\" \/><\/p>\n<ul>\n<li>Add an airlock to a fermentation vessel\u00a0and ferment in a dark location between 65-86 degrees (depending on the yeast strain) until fermentation is finished. (I ferment around 70 degrees as that is the current temperature in the basement)<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/cdn.shopify.com\/s\/files\/1\/0054\/6682\/files\/add_airlock_grande.JPG?1278\" alt=\"\" \/><\/p>\n<h3>Apple Moonshine Distillation Process<\/h3>\n<ul>\n<li>After fermentation, transfer the apple wine to a 5 gallon bucket with an auto-siphon. Transfer only the liquid to the copper still, leave behind the yeast and other sediment.<\/li>\n<li>Make tight heads and tails cuts.<\/li>\n<li>Commercial distillers would set the hearts aside to be aged (for a premium product) or even conusmed without any doctoring. They might even &#8220;stretch&#8221; the amount of consumable product by mixing\u00a0a bit of the heads and and a fair amount of the tails (nearest to the hearts) with\u00a0the hearts. They would most likely age this product because aging smooths out much of the harshness of the heads and tails. Most distillers don&#8217;t age for any particular amount of time.
